Carrot pulav was made for my fussy little daughter who likes the small of spices but hates vegetables. So putting carrot or any other vegetable in a biriyani form was the best way to make her eat a healthy wholesome meal.
Onions – 2 medium
Green chilli – 2
Cinnamon – 1 inch
Bay leaf – 1
Clove – 2
Basmati rice – 1 cup
Garam masala powder – 1/4 tsp
Coriander – 1/2 cup
Salt to taste
Grated carrots – 1 cup
Soak the rice for half an hour, drain it and set aside.
In a heavy bottom vessel add 1 tbsp oil and 1 tsp ghee when it’s hot add the spices add sauté for a minute.
Add the onion cut length wise and sauté till they turn translucent.
Add the ginger garlic paste and fry till the raw smell disappears. Add the grated carrots and sauté till its tender.
Add the water and the rice with half of the coriander close the lid and cook it in low flame for 15 mins. Put off the flame and garnish with remaining coriander and keep the lid closed for about 15 mins and serve hot.
Ur kids are going to love this coz it’s less on spice and has a great flavour and aroma.
