Yule log cake

Christmas has just gone…this is the season  we have been waiting for the whole year. Its full of fun, celebrations, gatherings and it would go on till the beginning of the new year which we all look forward to with new energy, hope and happiness. Christmas is one season children look forward to. From putting up the Christmas tree to decorating the house with lights, they get excited during this season.

This year i have joined a new home baking group called baking partners whose challenge was to make the yule log cake. Firstly i would like to thank swathi from zesty south indian kitchen for joining me in her wonderful group.

This yule log cake is an excellent dessert and was very much loved by my daughter.

Recipe suggested by Tanushree of Ma Niche

For the cake:

Unsalted butter for greasing
1 cup all-purpose flour, plus more for dusting
3/4 tsp. baking powder
1/4 tsp. salt
4 eggs, at room temperature separated into whites and yolks
2/3 cup granulated sugar
1 1/4 tsp. vanilla extract
Confectioners sugar for dusting

For the filling:

Whipping cream- 1/2 cup
Sugar- 5 tbs
Dark chocolate- 4 oz.
Unsalted butter- 4 oz/ 1/2 cup
Vanilla essence- 1/2 tsp

For the syrup:

1/4 cup water
1/4 cup granulated sugar
2 to 3 Tbs. dark rum or coffee-flavored liqueur


10 oz. bittersweet chocolate, finely chopped
2 1/4 cups heavy cream
1 tsp. vanilla extract
Pinch of salt



For the cake:

Beat the egg whites along with 1/3 cup of sugar and a tsp of  vanilla until soft glossy peaks.
In another clean bowl beat the yolks until pale and thick along with another 1/3 cup of sugar and vanilla.
Sift together the flour, baking powder and salt.
Mix the flour into the yolk in 3 batches a little at a time by cut and fold technique till its just incorporated. Mix in the whites using the same technique making sure no air escapes out.
In a well greased 10′ jelly roll rectangular pan line the bottom with parchment paper and pour in the batter and bake for 13-15 mins or just until done.
Lay a cloth or butter paper on a table top and dust it with confectionery sugar.
Invert the cake sheet on the butter paper and roll it and let it cool in a cooling rack.

For the syrup:

Mix together water and sugar and bring it to boil.
Remove from the stove and add in the coffee powder or rum. Let it cool.

For the frosting:

Melt the chocolate in a double boiler along with heavy cream and salt.
Let it cool
Refrigerate for an hour or until it becomes a little firm.

For the filling:

Melt the chocolate and once it cools add to the cold cream along with butter and sugar and whip until creamy and spreadable.


Assembling the cake :

Unroll the cake brush in the syrup generously spead the filling and roll it again.
Spead the frosting on the top and make marks woth fork to resemble a log of wood.
Yule log cake is ready.
