200gms caster sugar
1tsp pure vanilla extract
1tsp pineapple extract
200gms all purpose flour
2 tsp baking powder
125gms unsalted butter
For the topping
40gms unsalted butter
4tbsp golden syrup
40gms canned pineapple rings drained
4-6 glazed cherries halved
Preheat the oven to 160 C
Grease a 9 inch round tin and line with baking paper
For the topping, place the butter and golden syrup in a heavy bottom saucepan and heat gently until melted. Boil for 2-3 mind until slightly thick and toffee like.
Pour the syrup into the base of the prepared tin. Arrange pineapple and glazed cherries.
Place the eggs, sugar, and vanilla and pineapple extract over a saucepan of simmering water and. Whisk in an electric mixer for 10- 15 mins thick enough to leave a trail when the mixer is lifted. Fold in the sifted flour and the baking powder. Melt the butter and fold into the mixture. Pour into the tin and bake it for about 70mins.
Leave it to cool completely
Cut the cake into two equal layers and spread in the whipped cream and allow it to set in the refrigerator for an hour before serving.
