Arabic Biriyani


My mom is a gr8 cook…My dad runs a chain of south Indian restaurents in Bahrain. So we never really had home cooked food evryday coz we regularly had our food at our restaurent. So the day my mom cooked was some kind of a festival for us.. Me and my sister used to ask her to make this dish for us….


Basmati Rice – 1cup

Water – 2cups

Onions – 4 big ( 3 big onions sliced length wise and deep fried)

Tomato – 2 medium

Clove – 2

Bay leaf – 1 big

Cinnamon – 1 inch piece

Chicken –  11/2  cup cut to small chunks

Raisins – 1/2 cup fried in butter

Green chilli – 1

Red chilli powder – 1tbsp

Garam masala powder – 1tbsp

Ginger garlic paste 1 tbsp

Shahi Biriyani masala powder – 1tbsp

Corriander leaves &  mint leaves  –  1/2 cup

Salt to taste


The rice and the chicken gravy must be done separately and then mixed

For the rice

Add the soaked basmati rice to a microwave safe bowl and add 2 cups of water , salt to taste , 1/2 tbsp ginger garlic paste , 1 clove , 1 cardamom, 1/2 inch cinnamon , 1/2 onion sliced, 1tbsp oil and microwave it on High for 15 – 17 mins or until the rice is cooked.

For the gravy

Take a heavy bottom vessel and add 1tbsp of clarified butter or ghee

Add in the remaining spices

Add 1/2 onion cut length wise and let it cook until translucent

Add the ginger garlic paste and sauté for a minute and add in the tomatoes and cook for 2-3mins

Now add the chilli powder, coriander powder, garam masala powder and shahi Biriyani masala powder and just add about 2 tbsp of water to prevent the powders from frying and sauté it for 2-3mins

Add in the chicken  and add another 1 cup of water. Cover the vessel with a lid and let it cook for 10mins on low flame till the chicken is completely cooked and the oil separates from the gravy and its very thick

Now its time to combine the gravy and the rice

Add in a Layer of rice and add a some fried raisins, fried onions, coriander and mint leaves and add a layer of the chicken gravy. Then again add rice and repeate the process again and finish off the top layer with rice and fried onions and raisins to decorate . Again microwave it for 5mins.

Delicious Arabic biriyani is ready

Add some boiled egg slic

Note:-  This Biriyani will be very mild and less spicy. The real taste enhancer is the fried onions and raisins
